Why Liang Zai

Prawn noodles (虾面 · Har Mee) is one of Singapore's most loved hawker dishes — and one of the hardest to do well. We've already cracked the broth, built the brand and proven the unit economics. You bring the location and the will to run it.

01.

Mass-premium tier

Hawker-friendly pricing with restaurant-tier quality. Big head-on prawns + deep broth at S$8–8.50 a bowl.

02.

Centralised soup base

The broth is the brand. Supplied from a central kitchen — every Liang Zai outlet tastes the same.

03.

Proven by 6 outlets

Macpherson to Punggol to Lucky Plaza — six locations live, 4.9★ on Google, sister brand running too.

Questions Prospects Ask

Do I need F&B experience?
No — but you need to be willing to learn it properly. We run a 4–6 week hands-on training programme covering kitchen operations, broth preparation, staff management, and daily SOPs. What we can't train is work ethic and presence. If you're expecting to delegate from day one, this isn't the right fit. If you're willing to be at the stall and own the execution, the system will support you.
Can I hire staff to run it without me being present?
Not in the early stages, and frankly not our preferred model at any stage. Liang Zai outlets perform because the operator cares about what goes out. You can and should build a team — but we're looking for owner-operators, not passive investors. If you want a business that runs entirely without you, this isn't it.
Is the territory truly exclusive?
Each franchise agreement defines a specific territory. Exclusivity terms are confirmed at the agreement stage based on your location and surrounding catchment. We won't place another Liang Zai outlet in a way that cannibalises your business — but the specifics are governed by the signed agreement, not a blanket promise. Ask us directly on the call and we'll give you a straight answer for your target location.
What happens if I underperform?
We do quarterly audits and monthly business reviews — not to police you, but because a struggling outlet hurts the brand and we'd rather fix it early. If performance issues persist, we'll work through them together first. Persistent non-compliance with SOPs or brand standards is a different matter — that's grounds for termination under the agreement. We're not looking to take back outlets. We're looking to not sign the wrong operators in the first place.
Can I own multiple outlets?
Yes — and it's something we actively encourage for operators who execute well. Multi-unit ownership is on the table after your first outlet is stable and hitting targets. We won't entertain a second application from someone whose first outlet is underperforming. Prove the first one, and the conversation on expansion opens naturally.
